Carnival of the Recipes #26

I'm not much for baking cakes, never really find the time. However, if I do have to bake a cake, invariably it is this one. It is easy to make, and gets rave reviews every time. Have a piece with a cup of tea, and you have a heavenly afternoon tea time.


Banana Cake

Ingredients

1 1/2 cups plain flour
1 tsp ground cinnamon
1/2 tsp bicarbonate of soda (baking powder)
1 cup castor sugar (superfine)
3/4 cup chopped pecan nuts
1 cup mashed banana (requires 3 bananas)
450g (16oz) can crushed pineapple, well drained
1/2 cup oil
2 eggs, lightly beaten

Method

Grease a 20cm (8 inch) ring pan, line base with paper, and then grease the paper.
Combine sifted dry ingredients, sugar and pecans in a large bowl. Stir in banana, pineapple, oil and eggs. Spoon the mixture into the prepared pan.
Bake in a moderate oven (180 degrees C, 350 degrees F) for 1 hour. Stand 10 minutes before turning onto wire rack to cool.

I'm going to make/bake this puppy Saturday. If I bloat out, I'm holding you personally responsible. Bananas. Still can't get over how good they are!
